How2 Make Ghee or Clarified butter

  • Ghee or clarified butter is used extensively in Indian cuisine as it is recognised for its ability to enhance the absorption of nutrients by the body. You can buy it in Asian food stores or you can make it yourself.
  • Melt a 500g block of butter in a small saucepan and simmer it gently on the lowest heat.
  • Foam (milk solids) will form on the surface, and this can be skimmed off or left to sink at the bottom.
  • After 12-15 minutes, the fat will be golden and clear and the milk solids will be lying at the bottom of the pan.
  • Remove from heat and cool for 10 minutes.
  • Pour off the clarified butter fat into a glass jar and discard the milk solids that remain in the pan.
  • The clarified butter will solidify as it cools. Store it in the fridge.
