- To make a cup of fresh coconut milk, blitz 2 cups shredded coconut with 1 cup hot water in a food processor for 1 minute.
- Strain through a sieve, pressing out as much liquid as possible.
- Use straight away or keep in a jar in the fridge, using within a few days.
- The left-over coconut pulp can be used in cooking which calls for ground coconut.
